Fit Foods Lab Favorite: The BEST Chicken Bowl

Ingredients:

210 grams of chicken tenderloins

60 grams of tri-color coleslaw mix

55 grams of plain non-fat greek yogurt (FAGE is my personal favorite)

200 grams of sweet potatoes

65 grams of avocado (if you would like more volume, mash your avocados and mix in 20 grams of greek yogurt)

Measure with your heart:

Salt

Pepper

Lime juice

Paprika

Chili powder

Garlic Powder

Italian Seasoning

Sweet Potato Fries Instructions:

  1. Preheat air fryer to 400 degrees (F)
  2. Slice sweet potatoes long ways into fry shapes
  3. Line a sheet pan with parchment paper (avoid aluminum foil to avoid overheating)
  4. Lay sweet potato fries without overlapping on the parchment paper and season with garlic powder, salt, and italian seasoning (measure with your heart)
  5. Once preheated, air fry the sweet potatoes for 16 minutes

Chicken Instructions:

  1. Slice chicken tenderloins into bite sized pieces
  2. In a ceramic pan on medium heat, season bite-sized chicken pieces with garlic powder, paprika, chili powder, and salt
  3. Cook until golden (or 165 degrees F)

The INFAMOUS Taco Slaw Instructions:

  1. In a bowl, mix tri-color coleslaw mix, plain non-fat greek yogurt, lime juice, salt and pepper
  2. Let sit for at least ten minutes to allow the tri-color coleslaw to absorb the flavors

HOW TO PLATE?

In a deep set plate, serve taco slaw, chicken, sweet potato fries, and avocado
